Logan Williams is one of the 26 national winners in the cooking competition

On Oct. 30, he and 25 other winners from across Canada, ranging in age from 7 to 13, participated in a virtual cooking session with celebrity chef Marysol Foucault.

The ‘taco mashup,’ as Williams, 11, puts it, is his brainchild. “Eating the ultimate result,” he remarked, is his favorite part of cooking. He wanted to try something new during the Covid-19 lockdown in Arviat, so he combined some of his favorite dishes. That’s when the idea for a taco mashup was born.

The President’s Pick The recipe contest was hosted by Children’s Charity, Corus Entertainment, and BGC Canada (previously Boys and Girls Clubs of Canada).



Special sauce

  • ⅓ cup (75 mL) plain Greek yogurt
  • ⅓ cup (75 mL) whipped dressing or mayonnaise
  • 1 tsp (5 mL) garlic powder
  • ½ tsp (2 mL) pepper
  • ½ tsp (2 mL) seasoning salt
  • ½ tsp (2 mL) salt-free seasoning blend, such as Mrs. Dash
  • Taco
  • 2 lb (1 kg) ground beef or caribou
  • 1 tsp (5 mL) salt-free seasoning blend, such as Mrs. Dash
  • ½ tsp (2 mL) Worcestershire sauce
  • ¼ tsp (1 mL) each salt and pepper
  • 1 tbsp (15 mL) canola oil
  • 2 tsp (10 mL) Montreal steak spice
  • 1 small onion, finely diced
  • 2 tsp (10 mL) garlic powder
  • 1 pkg (8 oz/227 g) button mushrooms, sliced
  • 1 large bell pepper, diced
  • 1 tsp (5 mL) chili powder
  • 1 ½ cups (375 mL) shredded marble cheddar cheese
  • 12 small flour tortillas (approximately)
  • 1 tomato, diced
  • ½ cup (125 mL) each chopped cooked bacon and chopped pickles (optional)
  • 2 cups (500 mL) shredded lettuce
  • 2 avocados, chopped

To make the special sauce, mix yogurt, whipped dressing or mayonnaise, garlic powder, pepper, salt, and seasoning blend in a mixing bowl and whisk until smooth. 

Taco: Cook beef and onion in a large nonstick skillet over medium-high heat for about 8 minutes or no longer pink. Remove any excess fat. Cook for two minutes to let flavors combine, then add steak spice, garlic powder, chili powder, seasoning blend, salt, Worcestershire sauce, and pepper to beef mixture. 

Heat oil in a separate skillet on medium-high heat and sauté mushrooms and pepper for 5 minutes, or until browned and soft.

Fill tortillas halfway with beef, then top with mushroom mixture and drizzle with special sauce. Lettuce, cheese, avocado, tomato, bacon (if used), and pickles are sprinkled on top (if using). Fold it up and enjoy it. Rep with the rest of the ingredients.
